Marigold
The strongly-held belief that healthy nutrition contributes to our quality of life, as well as the enjoyment of cooking and the love of experimentation, have led me to look at the worth of biologically produced fruit, vegetables and herbs, and finally to wild herbs.

The homemade items that are the end-product taste wonderful and are part of a herbal breakfast that is offered to our guests once or twice a week:
homemade farmers' bread, herbal butter or quark, sea buckthorn-tomato or pumpkin jam, dandelion honey, our own mix of herbal teas...

In summer, my husband and I put down our own herbal garden that we now profit from every day, as well as drying green and colourful fresh produce for the winter months. Hops, lemon balm, malva, cornflowers, nasturtiums, sage, mint, woodruff, marigold, mullein and many others.

I don't just use the dried herbs for our "healthy stomach" or "anti-cold" tea mixes, or our wild herb salts or decoration, but also for aromatic bags for the bath or neck supports that are available for our guests to try and which contribute to a good night's sleep.

This is something which is dear to my heart, but which also interests our guests and which I hope to develop further.
Manuela Walzl

For those who are interested I recommend a guided walk which is led by the natural history and herbal expert Irmela Neumann. She is a unique woman and possesses the ability to share her knowledge of herbs during a 2.5 hour walk.
